As I said in my last post, I’ve had a recent obsession with Tequila.  Add that to my obsession with mint, watermelon, and fancy mixed drinks and you get this refreshing Watermelon-Mint Cocktail!  What’s not to love about this drink?  It’s sweet, fruity, and unbelievably refreshing.  Plus, I absolutely love the intense, vibrant hot pink color of the watermelon juice.  So pretty.

I infused this cocktail with mint, but I’ve also tried rosemary in this recipe before and it tasted pretty damn awesome as well.  I got my mint from my indoor herb garden, and since I didn’t want to completely demolish my mint plant, I opted to make the mint stretch a little farther by creating a mint simple syrup instead of muddling the mint as you would ordinarily do when making a mojito.  This recipe will give you a little more simple syrup than you need, so pour the unused simple syrup in a cruet or flask, stick it in the fridge and break it out next time you want to make a mojito or another beverage!

Lately I’ve been more than a little obsessed with tequila.  Something about it reminds me of sipping cold margaritas on a hot, sandy beach -a welcomed memory during the coldest month of the year.  I love winter comfort foods, but sometimes I need a break from heavy beefs and stews.

Traditionally, tostadas are prepared with pork or chicken, refried beans, cheese, and all sorts of other fattening, but delicious, goodies stacked on top of a fried corn tortilla.  I decided to lighten mine up a bit by omitting the beans and cheese, using shrimp as the protein, and adding massive amounts of flavor with the sweet honey-slaw, spicy homemade pico de gallo, and a dash of Tabasco.  Even my seriously carnivorous husband loves this dish, -so much in fact he requested it twice in the same week!  (Yes, I am seriously patting myself on the back right about now!)
